Gokō Matcha (Single Cultivar Gokou Matcha)

This single cultivar Gokou matcha is produced exclusively from the Gokō cultivar, a traditional Japanese tea variety developed in Uji and officially released in the mid-20th century. Unlike blended matcha powders, single cultivar matcha highlights the natural flavor profile of the tea plant itself.

Gokō matcha is prized for its creamy body, rich umami, and smooth texture. When prepared correctly, it delivers a calm, balanced drinking experience that many customers describe as naturally sweet and pleasant, without harsh bitterness.

First Harvest, Stone Milled Matcha Powder

Authentic Uji matcha is made by shading tea plants for approximately 20–30 days before harvest. This process increases chlorophyll, amino acids, and L-theanine, contributing to the vibrant green color and smooth taste.

After harvest, the tea leaves are steamed, dried, and de-stemmed to create tencha. These tencha leaves are then stone milled slowly to prevent heat buildup and preserve aroma, nutrients, and freshness. The resulting matcha powder is exceptionally fine and whiskable.

How to Prepare Gokō Matcha

To prepare traditional thin tea, sift 1–2 grams of matcha powder into a bowl. Add hot water (70–80°C) — avoid boiling water — and whisk vigorously using a bamboo whisk until smooth and frothy.

This brewing method highlights the matcha’s aroma, natural sweetness, and umami while minimizing bitterness.
