Producing single-cultivar organic Uji matcha requires strict soil management, careful shade cultivation, and slow, low-heat stone milling.
Very few farms in Kyoto remain capable of maintaining this level of organic cultivation, making organic Saemidori matcha increasingly rare each year.
This matcha is certified under the JAS Organic Standard, ensuring it is grown without synthetic pesticides or herbicides.
From a 160-Year-Old Tea Farm in Wazuka
Nestled in the rolling hills of Wazuka, this family-run farm has practiced traditional matcha cultivation for more than a century and a half.
Every spring, the first flush Saemidori leaves are shaded, harvested, and transformed into tencha using time-honoured methods that protect colour, aroma, and nutritional integrity.
This dedication to craftsmanship is what allows this matcha to achieve its smooth, nutty, and naturally sweet profile.
